Healthy Recipe – Winter Salad with Pears, Fennel and Walnuts

winter salad with pears fennel walnutsJust because it’s cold outside doesn’t mean you can’t enjoy a salad. Not only does this dish look appetizing, it’s full of healthy nutrients. Enjoy it alongside your favorite entrée.

ingredients

salad
6 cups mixed salad greens
1 medium fennel bulb, thinly sliced
2 medium pears, cored and thinly sliced
¼ cup toasted walnuts, chopped
¼ cup goat cheese, crumbled

dressing
2 Tbsp olive oil
2 Tbsp red wine vinegar (can substitute balsamic vinegar)
1 Tbsp lemon juice
1 tsp Dijon mustard
freshly ground black pepper, to taste

preparation

Divide the salad greens onto 6 plates. Distribute the fennel and pear slices over the greens. Sprinkle with goat cheese and walnuts. Mix all dressing ingredients in a small bowl, and drizzle on salad. Serve immediately.
